Yankee Doodle Macaroni Sauce

Adapted from my high school home-ec Betty Crocker book. Adapted a lot because ideas of how we should eat have changed significantly. At the time of Yankee Doodle, “macaroni” was a term to describe elegance.
Saute 6 c minced onion, 6 cloves minced garlic and 6 c sliced mushrooms in a pan with 4 T oil.
When onions are transparent, add 3 lb ground beef and cook until brown, breaking it up as it cooks.
Add 4 24oz cans of diced tomatoes, 2 t salt, 1/2 t pepper and 6 T minced parsley. Simmer slowly, covered, for about 45 minutes.
To freeze, portion into 12 ziploc bags. To serve, thaw in frig and heat gently in MW. Serve over cooked macaroni or other pasta product.
