Makes 6-8 servings
Preparation time: 10 minutes
Ingredients –
1 pint fresh strawberries
1 pint Vanilla Bean Coconut Ice cream
2 cups blueberries, frozen or fresh
Popsicle molds, or Dixie cups and popsicle sticks
Optional: simple syrup for additional flavor
Instructions

  • Wash strawberries
  • Cut off stems and place strawberries into a mixing bowl
  • With your hands, mixing device, or food processor, mix strawberries until it is half strawberry chunks and half puree
  • Place Dixie cups or popsicle molds on the counter
  • With the three ingredients — strawberries, ice cream and blueberries — alternate each ingredient in an individual popsicle mold (our favorite is the red-white-blue sequence). Blueberries can be intermixed in each layer
  • Place in the freezer for 4 hours, or until frozen
  • Remove from freezer. Put mold under warm water for 2-5 seconds and gradually remove pop from the mold
  • Enjoy!
