These Red, White & Blueberry Popsicles Will Cool You Down
Whew! It’s hot outside and you just want a cool, healthy snack. What should you do? Check out this neat popsicle that has all the fruit flavor you want with no added sugar. Plus, it’s a great treat for an Independence Day party!
Makes 6-8 servings
Preparation time: 10 minutes
Ingredients –
1 pint fresh strawberries
1 pint Vanilla Bean Coconut Ice cream
2 cups blueberries, frozen or fresh
Popsicle molds, or Dixie cups and popsicle sticks
Optional: simple syrup for additional flavor
Instructions
- Wash strawberries
- Cut off stems and place strawberries into a mixing bowl
- With your hands, mixing device, or food processor, mix strawberries until it is half strawberry chunks and half puree
- Place Dixie cups or popsicle molds on the counter
- With the three ingredients — strawberries, ice cream and blueberries — alternate each ingredient in an individual popsicle mold (our favorite is the red-white-blue sequence). Blueberries can be intermixed in each layer
- Place in the freezer for 4 hours, or until frozen
- Remove from freezer. Put mold under warm water for 2-5 seconds and gradually remove pop from the mold
- Enjoy!
