Classic Cornbread

This recipe was served at our January Community Kitchen Dinner at Rainier Beach Urban Farm & Wetlands. The menu consisted of traditional Southern New Year’s food — “peas for pennies, greens for dollars, and cornbread for gold!”
Ingredients

  • ½ cup butter
  • ½ cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 400 degrees F. Grease an 8-inch square pan
  2. Melt butter, then add to mixing bowl. Stir in sugar, add eggs and beat until well blended.
  3. Add buttermilk, cornmeal, flour and salt and stir until well blended and few lumps remain.
  4. Pour batter into the prepared pan. Bake in a preheated oven for 20-40 minutes, or until a toothpick inserted in the center comes out clean.
