Classic Cornbread
This recipe was served at our January Community Kitchen Dinner at Rainier Beach Urban Farm & Wetlands. The menu consisted of traditional Southern New Year’s food — “peas for pennies, greens for dollars, and cornbread for gold!”
Ingredients
- ½ cup butter
- ½ cup white sugar
- 2 eggs
- 1 cup buttermilk
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ teaspoon salt
Instructions
- Preheat oven to 400 degrees F. Grease an 8-inch square pan
- Melt butter, then add to mixing bowl. Stir in sugar, add eggs and beat until well blended.
- Add buttermilk, cornmeal, flour and salt and stir until well blended and few lumps remain.
- Pour batter into the prepared pan. Bake in a preheated oven for 20-40 minutes, or until a toothpick inserted in the center comes out clean.
