WA Meat Up Butchery Workshop for Processors

Join WSU NE Washington Regional Livestock Extension Specialist Paul Kuber in a special two-part workshop at the Tilth Conference at Fort Worden in Port Townsend. The first hour of the workshop will take place inside WA Meat Up’s Mobile Meat Classroom, and will cover meat butchery demonstrations across multiple species, current industry trends, understanding your consumer base, pricing strategies to improve profit margin, and efficiencies in fabrication and scheduling. Participation in this workshop is limited to 8 participants.

After lunch (included with registration) we will return for a larger discussion with producers and meat processors across the sector for an opportunity to debrief, connect and learn from each other.
