Curious about how to bring more creativity and fun into your kitchen? Fermented foods are nutritious and flavorful, and they can be a great way to connect with food and culture. Join us for this three-day, 15-hour course and learn how to make your own healthy and delicious fermented foods at home!
In each session, we’ll learn about a variety of fermented goods and how to prepare them. From kimchi to yogurt, sourdough to kombucha – we’ll explore the science of fermentation, while honoring the roots of these culturally special foods. Discover the joy of fermentation with a community of fellow fermenters!
This course is designed for beginners and folks looking to expand their understanding and experience in the kitchen.
Topics in this class include:
- Microbiology of fermentation; how microbes transform raw foods into probiotic superfoods
- An in-depth exploration of the spectrum of fermented foods
- History of fermented foods and review of their cultural origins
- Materials and supplies that can be helpful to ferment at home
Activities in this class include:
- Seeing, smelling and tasting fermented foods
- Take-home projects with veggies, dairy, grains, beverages and vinegars
- Demonstrations of continued care for your fermenting products
Class will take place on three different Saturdays from 10:00am-3:00pm. Dates and locations are:
- October 10 at Rainier Beach Urban Farm & Wetlands
- November 14 at Good Shepherd Center
- December 5 at Rainier Beach Urban Farm & Wetlands
Each class will include a mixture of conversational lecture, taste-testing, and hands-on practice with each recipe. Class participants will have the opportunity to come back with samples from their projects to the following class for enjoying and/or troubleshooting.
Class size is limited to 15 people and materials fee is included in registration. Participants can expect to finish the program with a set of comprehensive resources, recipes and various starters for different fermentation projects.
