Erin Martin

Erin Martin is a gerontologist and certified regenerative soil advocate working at the intersection of healthcare, nutrition and agriculture. Inspired by her early work in a retirement home, she pursued a master’s degree in Gerontology and now focuses her efforts on integrating food as medicine into chronic disease care—grounded in the principles of regenerative agriculture. She is the founder of FreshRX Oklahoma, a produce prescription program that connects primary care clinics with local, underserved farmers to improve food access and health outcomes. She also co-leads the Oklahoma Food is Medicine Policy Coalition, a statewide effort focused on advancing nutritional interventions and regenerative farming practices as part of a value-based approach to enrich Oklahoman lives. In addition, Erin serves as president of the Tulsa Urban Ag Coalition, where she advocates for the vital role of soil health in community well-being.
